Culinary Arts prepares students to enter employment in food service occupations. Instruction focuses on sanitation, nutrition, food preparation, purchasing, and inventory control in addition to food presentation and service. Students plan menus, prepare food and use a variety of kitchen equipment such as ovens, grills, broilers, slicers, grinders, and blenders. This program articulates with Tidewater Community College. Culinary Arts students study: cooking meals according to specific customer requests, preparing special meals for patients as instructed by a dietician, estimating requirements for food and other supplies based on customer numbers, supervising and training other cooks, planning menus, taking advantage of foods in season and local availability, and ordering food and kitchen supplies while keeping detailed records and accounts.
Culinary Arts is a two-year program
Credits:
- Articulated with Tidewater Community College for nine college credit hours
- Three elective high school credits per academic year for course; one to two verified credits for Culinary Arts (must pass NOCTI Assessment Exam)
Certification: NOCTI Culinary Arts Assessment
Prerequisites:
- Good academic standing, attendance, and behavior
- Reading materials for this course are at the 8.4 grade level
Fees: $30 for NOCTI Exam (second year)
Other Requirements: Students will be required to purchase/wear appropriate clothing. |
